Menu Plan Monday-A week Late or A Day Early

My menu plan last week was a 'greatest hits' week with all the family favorites that are quick and easy. I've been in the midst of a big project and needed to feed these kids fast, filling meals that had leftovers for snacks and, of course, breakfast. Making good breakfasts seems to be one of the defining characteristics of recipes around our house. 
One of the favorites is a slow cooker Mama's Mad Cow Chili with ground turkey, black beans, and white beans, a few cans of spicy Rotel tomatoes and whatever I feel like throwing in there. This week we topped it off with crispy corn tortillas strips.
These are quick and easy and very satisfying. Cut a stack of corn tortillas into thin strips with a sharp knife or a pizza cutter and then fry in a little oil until golden brown. We also topped the chili with shredded cheese, pickled jalapenos and a blend of low fat sour cream and plain greek yogurt.
This week I dip into some new gluten-free cookbooks for more fast food. Now that I've made them happy with all the old favorites, it's time to find some new ones.

Last weeks menu:
Pot Roast with potatoes and carrots, served with green beans sauteed in garlic
Mexican Lasagna for dinner and breakfast
Tinkyada penne with slow cooker meat sauce
Spicy Chicken with rice and broccoli(made by the youngest using her easy Pei Wei copy with extra garlic and chili to ward off the cold bug)
Kale and Potato Soup with spicy turkey sausage served with Pamela's muffin recipe with sharp cheddar and garlic added and baked in muffin top pans

Make It Fast, Cook It Slow Review Part 2

About 4:00 the scent of garlic and roasting meat started filling the house. So the combination of ingredients was a bit odd, but the smell was delicious. When all the teens were finally home from their afterschool workouts we served up Stephanie's recipe for Flank Steak Stuffed with Apple, Feta, and, Apples. It fell apart and didn't slice into a typical stuffed roll-type dish. I put it on top of rice and steamed veggies and then drizzled more of the cooking juices from the bottom of the slow cooker.
 Silence. Chewing sounds. 
"This is good." 
"This is really good." 
"This doesn't taste like I though it would when I watched you make it."
 "I'd eat this again." 
Then it was all gone. The apples and feta pretty much disappeared into the "sauce" when cooking, but left this amazing flavor. 

The rest of Make It Fast, Cook It Slow has some of the usual open a can, dump and cook all day type recipes, with a twist of flavor. There are other recipes like the flank steak that have unusual combinations of ingredients. We're feeling adventurous now that last night's dinner was such a success.

Gluten Free Cookbook Review-Make It Fast, Cook It Slow

I visited Stephanie O'Dea's blog A Year of Slow Cooking for gluten-free dinner ideas a lot last year. I loved the way she photographed her assembled ingredients so I could check out the gluten free products she was using. When I heard she had a new cookbook out, I ordered one and have been leafing through it trying to decide on a recipe for my review. There are so many good ideas with lots of the foods and flavors we love in our house. 

I just happened to have a flank steak marinating in tamari, waiting to be grilled tonight. It is the main ingredient in Stephanie's Flank Steak Stuffed with Apple, Feta, and Almonds. I also had all those things! It's in the slow cooker right this minute. My eldest watched me chopping up apples and garlic and rolling the flank steak around that with feta and almonds. 
"What are you making? That's going to really good or really awful," he said.
So, stay tuned until tomorrow to see if this "interesting" combo tastes as good as Stephanie promises.

Gluten Free Mexican Potato Cakes

The youngest had to make a Mexican dish to share with her Spanish class and she chose a Mexican potato cake recipe the Spanish teacher had copied from a Mexican cookbook. Of course, she had to change it a bit to make it gluten free, but a little rice flour instead of wheat flour was all it took. After using most of the utensils and mixing bowls, as well as all the dish towels, she had a lovely batch of  gluten free potato cakes to take to school.
I was allowed a sample and they were so good I thought I'd share the recipe. If the idea of jalapenos and cilantro fried up in a potato cake and served with salsa is your idea of delicious, read on.

Mexican Potato Cakes
1 1/2 pounds of potatoes peeled, cubed, boiled until tender
1 cup grated sharp Cheddar cheese
1/3 cup drained and finely diced pickled jalapeno chile slices
1 egg, beaten
a bunch of cilantro, finely chopped-use how much you like-we like lots and it makes the cake pretty
rice flour for shaping
oil for shallow frying 
Mash the cooked potato, doesn't have to be smooth. Stir in grated cheese, jalapeno and cilantro. Add the egg and mix into a dough. Using floured hands an a bit of flour shape into ten balls and flatten into cakes. These can be smaller and more appetizer portion if you like.
Fry these in a large frying pan in oil until golden. Serve with salsa and chopped cialntro.

Oikos Greek Yogurt Review

The nice PR people at Stonyfield sent me some coupons to try their Oikos Greek Yogurt. I had to confess to them that I already not only tried it and loved it, but there was some in my refrigerator. I was going to try some of the recipes on their web site, but every time I try to, the stuff is gone. Last week as I was passing through the youngest's bedroom, I spied another empty Oikos container and knew my plans were foiled once again.
She likes it in smoothies and straight up. I like to layer it with slivered almonds and honey like my favorite Greek restaurant serves it on their dessert menu. 

I get a lot of comments about folks having to go dairy free as well as gluten free. We were off dairy completely for the first 18 months after my eldest was diagnosed with celiac. We then added some dairy back using the Eat Right For Your Type or blood type diet suggestions for another year. Now that was kinda tricky for a family with Mom a type B, Dad a type A, Big Brother an A like his dad, and Little Sister an O like two of her grandparents. Now my little O has always had dairy issues, which is no surprise and none of us drink milk. The Oikos yogurt doesn't seem to bother her like other dairy and she eats two cartons a week with no problems. I don't know if the high protein content helps. It has 3x more protein than regular yogurt(15 grams to 5 grams).

So I didn't try any thing new, but when something is this good straight from the frig, why bother really.
