Gluten Free Menu Swap/Menu Plan Monday Sept 14


I missed the farmers' market again this Saturday, serving up burgers and hot dogs at the football game instead.
The corn fields are turning brown. There is a chill in the air.
My Saturday was spent in the local ritual of chicken pulling and noodle making in preparation for the county fair. It's the big money raiser for the high school athletic department and I finally gave in and volunteered. I shredded chicken. I'm told they do 1200 pounds of it.
I avoided the noodle-making and the flour coated cafeteria. But it has inspired me to make my own gluten-free version with Jessie's recipe again sometime soon.


More airport runs


and waiting in the car this week. I'm using store bought rotisserie chicken (always read the label to make sure they are GF and haven't changed their recipe on you), frozen seasoned chicken, pressure-cooked and frozen beans, the slow cooker, and a pre-cooked roast to help speed the cooking along for this very busy week.


The menu :

Grilled Marinated Flank Steak, Twice Baked Potatoes and Salad for the volleyball team dinner.
Fettuccine Alfredo with veggies and Grilled Salmon on the side. Made with evaporated milk and a rice flour roux instead of cream.
Beef Pot Pie-trying a new crust recipe from a new GF cookbook-will report back on how it worked.
Pizza night using Schar white bread mix for crust.
Chicken and White Bean Chili in the slow cooker with some of Heather's chicken recipe I froze.
Cold Sesame noodles w/ rotisserie chicken
Fresh Tomato and Chicken Sausage with Tinkyada Penne

I love your pictures and it is sad when the fields start to turn brown...but inevitable. 1200 lbs of chicken? wow.

You menu sounds so great - easy for you, but comforting for a busy week. Beef pot pie sounds great and I will have to try that chicken!

Thanks for stopping by Cheryl and Angela. Yes, that was quite a production Saturday. I wasn't there when they started on the pulled pork and the chili. It was pretty amazing to see the community working together to get the fair food ready. Very Norman Rockwell Americana feeling.
